I don’t try vegan baking often and was a bit wary of using the avocado but this turned out to be one of the most moist, rich desserts I’ve ever whipped up! It was really simple to throw together and is filled with healthy fat from the avocado, whole grain & has the heart healthy benefits of cocoa. It’s one of those recipes that tastes heavenly and just happens to be great for you too. You could even add other berries like strawberries or blueberries. Seriously, this is one you definitely have to try and don’t forget to top it with tons of fresh raspberries! :)

Get a box, rummage through your cabinets; I know you have that odd can of soup you’ll never eat, or that dried fruit you swore you’d eat instead of Cheetos. And don’t try to convince me you don’t have those couple sweaters collecting dust in the back of your closet. No, you’re not ever going to change your mind and think they’re not ugly. Put them to good use. Send a care package.
It’s easy to brush of pleas from other countries when they have disasters. Sadly we have the mind frame “they’re not like us.” This time you don’t get that excuse. Last week, they were just like you, fretting about what Halloween costume to wear, and if they person they like will text them back. Today, they’re concerned if they’ll eat or have heat. Do something. Be that person.

Black Bean and Guac Burritos (Vegan!)
Ingredients
- 2 large flour tortillas
- 1/2 cup brown rice, cooked
- 1/2 can black beans
- bag chopped lettuce, onion, and tomatoes
- 1/3 cup Moneteray Jack Cheese
Instructions
- * Also for ingredients,you will need a batch of guacamole.
- Spread guacamole in the center of the flour tortilla. Place rice, beans, cheese, and toppings on top of the guacamole. Roll into a burrito and tuck in the ends.
- Using an indoor grill or a panini press, heat burrito until tortilla browns on each side.
- Serve with remaining guacamole or salsa.

Blueberry Coconut Pecan Breakfast Cookies
INGREDIENTS
1 1/2 cups gluten-free rolled oats
1 cup unsweetened coconut flakes
1 tablespoon golden flaxmeal
1/2 teaspoon salt
3/4 cups coarsely chopped pecans
1/2 cup dried blueberries
3 very ripe bananas, mashed
1/4 cup coconut oil, warm enough to be liquid
1 tablespoon agave nectar
1 teaspoon vanilla extract

Nutella Fudge Pops
Ingredients
- 3 frozen bananas
- 1 tablespoon cocoa powder
- ½ cup chocolate hazelnut butter (nutella) or Homemade Nutella (much healthier)
- ½ teaspoon vanilla extract
- tiny pinch salt
Directions
- Blend all ingredients until super-smooth using a food processor or blender.
- Slight thaw the bananas so they are easier to blend.
- Eat as ice cream, or scoop into popsicle molds (or paper cups) and freeze for fudgsicles.
